Ingredients
  

Dry Ingredients
  • 2 cups rolled oats
  • 1 cup pecans, chopped Can substitute with walnuts or almonds
  • 1/2 cup cinnamon
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/4 cup coconut oil, melted
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Line a large baking sheet with parchment paper.
  3. In a large bowl, combine rolled oats, chopped pecans, cinnamon, and salt.
  4. In a separate bowl, whisk together melted coconut oil, maple syrup, brown sugar, and vanilla extract until combined.
  5. Pour the wet mixture over the dry ingredients and stir until well-coated.
  6. Spread the granola mixture onto the prepared baking sheet in a thin layer.
  7. Bake for about 20-25 minutes, stirring once halfway through.
  8. Allow to cool completely on the baking sheet, then break into clusters and store in an airtight container.

Notes

Store in an airtight container for up to two weeks at room temperature. Freeze for up to 3 months for freshness. Enjoy cold with milk, yogurt, or as a smoothie topping.
