Preparation
- Preheat your oven to 350°F (175°C).
- In a medium bowl, mix the graham cracker crumbs with the melted butter and 1/4 cup of sugar until it resembles a wet sand mixture. Press firmly into the bottom of a greased 9x13 inch baking dish.
- In a large mixing bowl, beat the softened cream cheese, remaining sugar, and vanilla extract with an electric mixer until smooth and creamy. Add the eggs one at a time, beating well after each addition.
- Pour the cream cheese mixture over the crust, spreading it evenly.
- In a separate bowl, mix the corn syrup, brown sugar, salt, and chopped pecans. Pour this pecan mixture over the cream cheese layer.
Baking
- Place the baking dish in the preheated oven and bake for about 55-60 minutes until set but still slightly wobbly in the center.
Cooling and Serving
- Once baked, let the bars cool at room temperature for at least an hour before refrigerating for at least 3 hours, or overnight if possible.
- Cut into squares and serve with optional whipped cream or a drizzle of caramel sauce, if desired.
Notes
Store in an airtight container in the refrigerator for up to a week. Freeze for up to three months. Thaw in the fridge overnight or microwave for a quick indulgence.
