Ingredients
  

For the crust
  • 1.5 cups graham cracker crumbs
  • 0.5 cups unsalted butter, melted
  • 0.25 cups sugar For crust mixture
For the filling
  • 1 cup sugar Remaining sugar for filling
  • 24 oz cream cheese, softened 3 (8 oz) packages
  • 1 teaspoon vanilla extract
  • 3 large eggs
For the pecan topping
  • 1 cup chopped pecans
  • 1 cup corn syrup
  • 1 cup brown sugar
  • 1 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, mix the graham cracker crumbs with the melted butter and 1/4 cup of sugar until it resembles a wet sand mixture. Press firmly into the bottom of a greased 9x13 inch baking dish.
  3. In a large mixing bowl, beat the softened cream cheese, remaining sugar, and vanilla extract with an electric mixer until smooth and creamy. Add the eggs one at a time, beating well after each addition.
  4. Pour the cream cheese mixture over the crust, spreading it evenly.
  5. In a separate bowl, mix the corn syrup, brown sugar, salt, and chopped pecans. Pour this pecan mixture over the cream cheese layer.
Baking
  1. Place the baking dish in the preheated oven and bake for about 55-60 minutes until set but still slightly wobbly in the center.
Cooling and Serving
  1. Once baked, let the bars cool at room temperature for at least an hour before refrigerating for at least 3 hours, or overnight if possible.
  2. Cut into squares and serve with optional whipped cream or a drizzle of caramel sauce, if desired.

Notes

Store in an airtight container in the refrigerator for up to a week. Freeze for up to three months. Thaw in the fridge overnight or microwave for a quick indulgence.
