Preparation
- Preheat your oven to 350°F (175°C). Grease a 9x13 inch baking pan with a little bit of butter or cooking spray.
- In a medium bowl, whisk together the all-purpose flour, baking powder, and salt.
- In a large mixing bowl, beat the softened butter, sugar, and brown sugar until fluffy, about 2-3 minutes.
- Incorporate the eggs one at a time, mixing well after each addition. Pour in the vanilla extract and blend until combined.
- Gradually add the dry ingredient mixture to the wet ingredients, stirring until just combined.
- Carefully fold in the chopped pecans, being gentle to maintain the cake’s fluffy texture.
- Pour in the corn syrup, mixing until the batter is fully incorporated but without over-mixing.
Baking
- Pour the batter into the greased baking pan and spread it evenly. Bake for 30-35 minutes or until a toothpick inserted into the center comes out clean.
- Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
- Slice and serve warm or at room temperature, with optional toppings like whipped cream or more pecans.
Notes
Storage: Wrap tightly with plastic wrap or store in an airtight container. Can be kept at room temperature for 2 days, in the fridge for 1 week, or frozen for up to 3 months. Reheat in the microwave for 10-15 seconds or at 350°F (175°C) for about 5 minutes to retain moisture.
