  • 2 large 2 large eggs
  • 1 tsp 1 tsp vanilla extract
  • cup 1/3 cup (40g) unsweetened cocoa powder
  • 1 cup 1 cup (125g) all-purpose flour
  • ¼ tsp ¼ tsp salt
  • ¼ tsp ¼ tsp baking powder
For the Pecan Pie Topping
  • ½ cup ½ cup (120ml) corn syrup
  • ½ cup ½ cup (100g) brown sugar
  • 2 large 2 large eggs
  • 1 tsp 1 tsp vanilla extract
  • 1 cup 1 cup (100g) pecans, chopped

Method

Preparation
  1. Preheat Your Oven: Begin by preheating your oven to 350°F (175°C). Grease a 9×9-inch baking dish or line it with parchment paper for easy removal.
  2. Make the Brownie Batter: In a medium saucepan, melt the butter over low heat. Once melted, remove from heat and stir in the sugar, eggs, and vanilla until smooth.
  3. Combine Dry Ingredients: In a separate bowl, whisk together the cocoa powder, flour, salt, and baking powder. Gradually add the dry ingredients to the butter mixture, mixing until just combined.
  4. Spread the Brownie Base: Pour the brownie batter into the prepared baking dish, spreading it evenly across the bottom.
  5. Prepare the Pecan Topping: In another bowl, whisk together the corn syrup, brown sugar, eggs, and vanilla until smooth. Fold in the chopped pecans.
  6. Add the Topping: Carefully pour the pecan topping over the brownie layer, spreading it gently to cover as much as possible.
  7. Bake: Place the dish in the preheated oven and bake for about 30-35 minutes, or until the edges are set and a toothpick comes out with a few moist crumbs.
  8. Cool and Serve: Let the brownies cool in the pan for at least 20 minutes before cutting into squares. Serve warm or at room temperature, perhaps with a scoop of vanilla ice cream on top!
