Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
- In another large bowl, mix the peanut butter, granulated sugar, brown sugar, and vanilla extract until well combined.
- Add the egg and mix until the mixture is creamy and smooth.
- Gradually add the dry mixture to the wet ingredients and mix until it forms a dough. Fold in chocolate chips if using.
- Using a tablespoon or cookie scoop, portion out the dough, roll into balls, and place them on a parchment-lined baking sheet. Flatten each ball slightly.
Baking
- Bake in the preheated oven for 10-12 minutes. The edges should be firm, while the centers may look underdone.
- Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
To keep cookies fresh, store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. Reheat in the microwave or preheated oven.
