For the Dough
  • 1 cup peanut butter (smooth or crunchy) Use almond butter or cashew butter as a substitute, ensuring they are Halal-friendly.
  • 1 cup granulated sugar
  • 1 cup brown sugar
  • 1 cup all-purpose flour Sift for smoother dough.
  • 1/2 cup cocoa powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 large egg
  • to taste chocolate chips (optional) Highly recommended for added flavor.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt. Set aside.
  3. In another large bowl, mix the peanut butter, granulated sugar, brown sugar, and vanilla extract until well combined.
  4. Add the egg and mix until the mixture is creamy and smooth.
  5. Gradually add the dry mixture to the wet ingredients and mix until it forms a dough. Fold in chocolate chips if using.
  6. Using a tablespoon or cookie scoop, portion out the dough, roll into balls, and place them on a parchment-lined baking sheet. Flatten each ball slightly.
Baking
  1. Bake in the preheated oven for 10-12 minutes. The edges should be firm, while the centers may look underdone.
  2. Allow cookies to cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

To keep cookies fresh, store in an airtight container at room temperature for up to 5 days or freeze for up to 3 months. Reheat in the microwave or preheated oven.
