Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the peanut butter, brown sugar, and egg. Mix until smooth and creamy.
  3. Sprinkle in the baking soda and vanilla extract into the mix, stirring until fully incorporated.
  4. Gently fold in the pretzel pieces and chocolate chips (if using) until evenly distributed throughout the cookie dough.
  5. Use a spoon or cookie scoop to drop rounded tablespoons of dough onto a parchment-lined baking sheet, spacing them about 2 inches apart.
Baking
  1. Place them in the preheated oven and bake for about 10-12 minutes, or until the edges are set and slightly golden.
  2. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Store in an airtight container at room temperature for up to a week or freeze for up to three months. To enjoy, let thaw or microwave for 10-15 seconds.
