  • 1 cup creamy peanut butter Use creamy for smoother texture
  • 1 cup granulated sugar
  • 1 cup brown sugar, packed
  • 1/2 cup unsweetened cocoa powder
  • 1/2 cup milk
  • 3 cups old-fashioned oats
  • 1 teaspoon vanilla extract
  • a pinch of salt Optional

Method
 

Preparation
  1. Gather all your ingredients and a mixing bowl. Line a baking sheet with parchment paper.
  2. In a medium saucepan, combine granulated sugar, brown sugar, cocoa powder, and a pinch of salt. Mix well to avoid lumps.
  3. Pour in the milk and stir continuously over medium heat until the mixture comes to a gentle boil. Let it boil for 1 minute, then remove from heat.
  4. Quickly stir in the peanut butter and vanilla extract until smooth and creamy.
  5. Fold in the oats until they are fully coated in the chocolate-peanut butter mixture.
  6. Using a tablespoon or cookie scoop, drop spoonfuls of the mixture onto the lined baking sheet.
  7. Allow the cookies to cool for about 30 minutes at room temperature or until set.
  8. Once set, enjoy your no-bake cookies straight away or after a meal.

Notes

Store in an airtight container at room temperature for up to a week, or freeze for up to 3 months separated by parchment paper.
