- In a large bowl, mix the mashed bananas, peanut butter, milk, honey or maple syrup, and vanilla extract until well combined.
- Add the rolled oats, baking powder, cinnamon, and a pinch of salt; mix until just combined.
- Evenly divide the mixture among the muffin cups, filling them about three-quarters full.
- Bake for 18-20 minutes or until golden and a toothpick inserted comes out clean.
- Let the oatmeal cups cool in the tin for about 5 minutes before transferring them to a wire rack.
- Serve warm.
