  • 1 cup peanut butter Use creamy peanut butter for smoother texture.
  • 1 cup sugar
  • 1 large egg
  • 1/2 cup jelly Choose your favorite flavor.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a mixing bowl, combine the peanut butter and sugar until well-blended.
  3. Add the egg, vanilla extract, baking soda, and salt. Mix until you form a soft dough.
  4. Using a spoon or cookie scoop, form small balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
  5. Make an indentation in the center of each cookie using your thumb or the back of a measuring spoon.
  6. Spoon about 1/2 teaspoon of your favorite jelly into each indentation.
  7. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
  8. Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag for up to three months.
