Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine the peanut butter and sugar until well-blended.
- Add the egg, vanilla extract, baking soda, and salt. Mix until you form a soft dough.
- Using a spoon or cookie scoop, form small balls of dough and place them on the prepared baking sheet, spacing them about 2 inches apart.
- Make an indentation in the center of each cookie using your thumb or the back of a measuring spoon.
- Spoon about 1/2 teaspoon of your favorite jelly into each indentation.
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden but the centers remain soft.
- Remove from the oven and let the cookies cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. For longer storage, freeze in a freezer-safe bag for up to three months.
