Ingredients
  

For the tart
  • 1 sheet puff pastry (thawed) Thaw for best results.
  • 3-4 pieces ripe peaches, sliced Choose ripe peaches for maximum flavor.
  • 1/4 cup sugar
  • 1 tablespoon cornstarch
  • 1 teaspoon vanilla extract
  • 1 piece egg (for egg wash) Can be replaced with water and non-dairy milk for a vegan option.
  • to taste powdered sugar (for dusting)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a mixing bowl, combine sliced peaches with sugar, cornstarch, and vanilla extract, and set aside.
  3. On a lightly floured surface, roll out the thawed puff pastry sheet until it’s slightly larger than its original size.
  4. Transfer the puff pastry to a baking sheet lined with parchment paper and poke small holes in the pastry to help steam escape.
  5. Spoon the peach mixture onto the center of the puff pastry, leaving about a 1-inch border around the edges.
  6. Fold the edges of the pastry over the peaches, creating a rustic border, and brush the edges with the beaten egg.
Baking
  1. Bake the tart in the oven for 25-30 minutes, or until the pastry is golden brown and puffed up.
  2. Allow to cool slightly, then sprinkle with powdered sugar before slicing. Serve warm for an extra treat.

Notes

Store in the refrigerator for up to 3 days covered loosely with plastic wrap. For leftovers, freeze slices for up to a month. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
