Preparation
- Preheat your oven to 400°F (200°C).
- In a mixing bowl, combine sliced peaches with sugar, cornstarch, and vanilla extract, and set aside.
- On a lightly floured surface, roll out the thawed puff pastry sheet until it’s slightly larger than its original size.
- Transfer the puff pastry to a baking sheet lined with parchment paper and poke small holes in the pastry to help steam escape.
- Spoon the peach mixture onto the center of the puff pastry, leaving about a 1-inch border around the edges.
- Fold the edges of the pastry over the peaches, creating a rustic border, and brush the edges with the beaten egg.
Baking
- Bake the tart in the oven for 25-30 minutes, or until the pastry is golden brown and puffed up.
- Allow to cool slightly, then sprinkle with powdered sugar before slicing. Serve warm for an extra treat.
Notes
Store in the refrigerator for up to 3 days covered loosely with plastic wrap. For leftovers, freeze slices for up to a month. Reheat in a preheated oven at 350°F (175°C) for about 10 minutes.
