Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the dry ingredients: flour, sugar, baking soda, and salt. Stir well.
- In another bowl, beat together the softened butter and both eggs. Add the vanilla extract and mix.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Gently fold in the diced peaches and chopped pecans.
- Grease a loaf pan (9×5 inch) or line it with parchment paper. Pour the batter into the pan.
Baking
- Bake the loaf in the preheated oven for about 60 minutes, or until a toothpick comes out clean.
- Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.
Notes
For optimal freshness, store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. It can also be frozen for up to 3 months.
