Ingredients
  

Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 teaspoon vanilla extract
Add-ins
  • 2 cups fresh peaches, diced
  • 1 cup pecans, chopped

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the dry ingredients: flour, sugar, baking soda, and salt. Stir well.
  3. In another bowl, beat together the softened butter and both eggs. Add the vanilla extract and mix.
  4. Gradually add the dry mixture to the wet mixture, stirring until just combined.
  5. Gently fold in the diced peaches and chopped pecans.
  6. Grease a loaf pan (9×5 inch) or line it with parchment paper. Pour the batter into the pan.
Baking
  1. Bake the loaf in the preheated oven for about 60 minutes, or until a toothpick comes out clean.
  2. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack.

Notes

For optimal freshness, store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. It can also be frozen for up to 3 months.
