Preparation
- Preheat your oven to 350°F (175°C).

- In a separate bowl, cream together softened butter, brown sugar, and granulated sugar until smooth and fluffy.
- Beat in the egg and vanilla extract until fully incorporated.
- Gradually mix the dry ingredients into the wet mixture.
- Fold in the diced peaches gently.
- Using a tablespoon or cookie scoop, drop rounded balls of dough onto a lined baking sheet.
Baking
- Bake for 10-12 minutes or until the edges are lightly golden.
- Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.
