  • 1/2 cup butter, softened Can be substituted with applesauce for a lighter version.
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon cinnamon Consider adding nutmeg for extra flavor.
  • 1/4 teaspoon salt
  • 1 cup peaches, diced Fresh or canned peaches can be used.
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, combine rolled oats, all-purpose flour, baking soda, cinnamon, and salt. Stir well.
  3. In a separate bowl, cream together softened butter, brown sugar, and granulated sugar until smooth and fluffy.
  4. Beat in the egg and vanilla extract until fully incorporated.
  5. Gradually mix the dry ingredients into the wet mixture.
  6. Fold in the diced peaches gently.
  7. Using a tablespoon or cookie scoop, drop rounded balls of dough onto a lined baking sheet.
Baking
  1. Bake for 10-12 minutes or until the edges are lightly golden.
  2. Allow cookies to cool on the sheet for 5 minutes before transferring to a wire rack.

Notes

Store cookies in an airtight container at room temperature for up to 5 days. For longer storage, refrigerate for up to 2 weeks or freeze for up to 3 months.
