  • 4 cups fresh peaches, sliced
  • 3/4 cup sugar
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
  • 1 tablespoon lemon juice
Fillo Dough and Topping
  • 1 package fillo dough
  • 1/4 cup butter, melted For brushing
  • Powdered sugar for dusting For serving

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, combine the sliced peaches, sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Toss until the peaches are well-coated and set aside.
  3. On a clean surface, unroll the fillo dough. Layer about six sheets on top of each other, brushing each with melted butter.
Assembly
  1. Spread the peach mixture evenly over the layered fillo dough.
  2. Fold the edges of the fillo dough over the peach filling to create a crinkle effect and brush with melted butter on top.
Baking
  1. Place your assembled pie on a baking sheet and bake for 40-45 minutes or until the top is golden brown and crispy.
Serving
  1. Allow the pie to cool slightly before dusting with powdered sugar just before serving.

Notes

Store properly in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat slices in a preheated oven at 350°F (175°C) for 10-15 minutes.
