Preparation
- Preheat your oven to 350°F (175°C).
- In a large bowl, combine the sliced peaches, sugar, cornstarch, vanilla extract, cinnamon, and lemon juice. Toss until the peaches are well-coated and set aside.
- On a clean surface, unroll the fillo dough. Layer about six sheets on top of each other, brushing each with melted butter.
Assembly
- Spread the peach mixture evenly over the layered fillo dough.
- Fold the edges of the fillo dough over the peach filling to create a crinkle effect and brush with melted butter on top.
Baking
- Place your assembled pie on a baking sheet and bake for 40-45 minutes or until the top is golden brown and crispy.
Serving
- Allow the pie to cool slightly before dusting with powdered sugar just before serving.
Notes
Store properly in the refrigerator for up to 3 days or freeze for up to 2 months. Reheat slices in a preheated oven at 350°F (175°C) for 10-15 minutes.
