Ingredients
  

Fruit Filling
  • 4 cups peaches, diced Use ripe peaches for the best flavor.
Crumb Mixture
  • 1 cup all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1/2 cup butter, melted Ensure the butter is not too hot.
  • 1 teaspoon cinnamon
  • 1/2 teaspoon salt
  • 1 teaspoon vanilla extract

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
  2. In a large bowl, toss the diced peaches with a tablespoon of sugar. Let them sit for about 10-15 minutes to release their natural juices.
  3. In another bowl, combine the flour, oats, brown sugar, granulated sugar, cinnamon, and salt. Mix well. Then pour in the melted butter and vanilla extract, stirring until the mixture becomes crumbly.
Baking
  1. Press about two-thirds of the crumb mixture into the bottom of the greased baking dish. Spread the peaches evenly over that layer and top with the remaining crumb mixture.
  2. Place the baking dish in the preheated oven and bake for 30-35 minutes, or until the topping is golden brown.
Cooling and Serving
  1. Allow the bars to cool completely before cutting them into squares. Enjoy your delightful creation!

Notes

These bars can be stored in an airtight container in the refrigerator for up to five days or can be frozen for up to three months. For a warm treat, microwave for 10-15 seconds.
