  • 1 cup all-purpose flour
  • 1 cup sugar
  • 1/2 cup unsalted butter (at room temperature) Softened butter is essential for proper creaming.
  • 1/2 cup milk
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup diced peaches (fresh or canned, drained) Use fresh or canned peaches.
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, salt, and cinnamon. Set aside.
  3. In a large mixing bowl, cream the unsalted butter and sugar using an electric mixer until light and fluffy, about 3-4 minutes.
  4. Beat in the vanilla extract and mix in the milk until smooth.
  5. Gradually add the flour mixture to the wet ingredients, mixing until just combined.
  6. Gently fold in the diced peaches.
  7. Spoon the batter into the prepared cupcake liners, filling each about two-thirds full.
Baking
  1. Place the muffin tin in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
  2. Allow the cupcakes to cool in the tin for about 5 minutes before transferring them to a wire rack to cool completely.
Serving
  1. If desired, sprinkle some additional cinnamon and sugar on top for added flavor!

Notes

These cupcakes can be stored in an airtight container at room temperature for up to 3 days or frozen for up to a month. Reheat in the microwave for about 15-20 seconds.
