Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
- Beat in the eggs one at a time, ensuring that each is fully incorporated before adding the next. Stir in the vanilla extract.
- In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the creamed mixture, mixing until just combined.
- Gently fold in the diced peaches and ground cinnamon until evenly distributed.
Baking
- Use a cookie scoop or tablespoon to drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
- Remove from the oven and let cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to 4-5 days. For longer storage, freeze cookies in a single layer on a baking sheet until frozen, then transfer to a freezer bag for up to three months. Thaw at room temperature or warm in the oven before serving.
