  • 1 cup diced peaches (fresh or canned) Ensure canned peaches are well drained
  • 1 teaspoon ground cinnamon

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large mixing bowl, cream together the softened butter, brown sugar, and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Beat in the eggs one at a time, ensuring that each is fully incorporated before adding the next. Stir in the vanilla extract.
  4. In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add this mixture to the creamed mixture, mixing until just combined.
  5. Gently fold in the diced peaches and ground cinnamon until evenly distributed.
Baking
  1. Use a cookie scoop or tablespoon to drop dollops of dough onto the prepared baking sheet, spacing them about 2 inches apart.
  2. Bake in the preheated oven for 12-15 minutes or until the edges are lightly golden.
  3. Remove from the oven and let cookies cool on the baking sheet for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to 4-5 days. For longer storage, freeze cookies in a single layer on a baking sheet until frozen, then transfer to a freezer bag for up to three months. Thaw at room temperature or warm in the oven before serving.
