- In a mixing bowl, combine the almond milk, chia seeds, maple syrup or honey, vanilla extract, and cinnamon. Whisk together until well blended, ensuring there are no lumps of chia seeds.
- Cover the mixture with plastic wrap or a lid, and allow it to sit at room temperature for about 10-15 minutes.
- Gently fold in the diced peaches once the chia mixture has thickened and the seeds have expanded.
- Transfer the mixture to individual serving bowls or a larger container. Place it in the refrigerator for at least 1-2 hours or overnight for a more set pudding.
Serving
- When ready to serve, give it a good stir and top with additional diced peaches and a sprinkle of granola for that crunchy finish.
Notes
Store leftovers in an airtight container in the refrigerator for up to 5 days. Does not freeze well.
