Pudding Base
  • 1 cup almond milk Can substitute with coconut or oat milk.
  • 1/4 cup chia seeds
  • 2 tablespoons maple syrup or honey Use maple syrup for a vegan version.
  • 1/2 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon Can add nutmeg for extra flavor.
Toppings
  • 1 ripe peach diced Fresh peaches enhance flavor.
  • 1/4 cup granola For added crunch on top.

Preparation
  1. In a mixing bowl, combine the almond milk, chia seeds, maple syrup or honey, vanilla extract, and cinnamon. Whisk together until well blended, ensuring there are no lumps of chia seeds.
  2. Cover the mixture with plastic wrap or a lid, and allow it to sit at room temperature for about 10-15 minutes.
  3. Gently fold in the diced peaches once the chia mixture has thickened and the seeds have expanded.
  4. Transfer the mixture to individual serving bowls or a larger container. Place it in the refrigerator for at least 1-2 hours or overnight for a more set pudding.
Serving
  1. When ready to serve, give it a good stir and top with additional diced peaches and a sprinkle of granola for that crunchy finish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 5 days. Does not freeze well.
