Ingredients
  

Wet Ingredients
  • 1 cup granulated sugar
  • ½ cup vegetable oil Consider replacing half with melted unsalted butter for richer taste.
  • 1 cup pumpkin puree
  • 4 large eggs Add one at a time, beating well after each addition.
Dry Ingredients
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • ½ teaspoon ground nutmeg
  • ½ teaspoon ground cloves
  • ½ teaspoon salt
Optional Ingredients
  • 1 cup chopped nuts Optional for added texture.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a baking dish (approximately 9x13 inches), or line it with parchment paper for easy removal.
  2. In a large mixing bowl, combine granulated sugar, vegetable oil, and pumpkin puree. Mix until smooth. Add the eggs one at a time, making sure to beat well after each addition.
  3. In another bowl, whisk together the flour, baking powder, baking soda, spices (cinnamon, nutmeg, and cloves), and salt.
  4. Gradually add the dry mixture to the wet mixture, stirring just until combined. If you’re using nuts, fold them in at this point.
Baking
  1. Pour the batter into your prepared baking dish. Bake for 25 to 30 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow the bars to cool in the pan before cutting into squares. Dust with powdered sugar if desired, and enjoy!

Notes

Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. For longer storage, freeze cut bars in a single layer for about 2 months.
