  • 2 3/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 1/2 cups granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon almond extract
  • Food coloring (pastel colors)

  • Frosting of choice (for filling) Use any Halal-friendly frosting, such as buttercream or cream cheese.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the all-purpose flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream the softened butter and granulated sugar until light and fluffy.
  4. Beat in the egg, vanilla extract, and almond extract until combined.
  5. Gradually add the dry ingredients to the wet mixture, mixing until a soft dough forms.
  6. Divide the dough into smaller portions and add pastel food coloring to achieve your desired shades. Mix thoroughly.
  7. Scoop tablespoon-sized portions of dough and place them on a parchment-lined baking sheet.
  8. Bake for 8-10 minutes or until edges are lightly golden. Let them cool completely.
Assembly
  1. Once cooled, spread a generous amount of frosting on the flat side of one cookie, then sandwich it with another cookie.
