Preparation
- Preheat your oven to 425°F (220°C).
- Slice the zucchinis into fry shapes, about 1/4 inch thick.
- In one bowl, combine the beaten egg. In another bowl, mix breadcrumbs, garlic powder, onion powder, parmesan, salt, and pepper.
- Dip each zucchini fry into the egg mixture, allowing excess to drip off, and then coat with the breadcrumb mixture, pressing slightly to adhere.
- Arrange coated zucchini fries in a single layer on a baking sheet lined with parchment paper and lightly spray the tops with olive oil.
Baking
- Bake in the preheated oven for about 20-25 minutes, flipping halfway through, until golden brown and crispy.
Serving
- Let them cool for a few minutes before serving with your favorite dipping sauce.
Notes
Try different coatings like adding herbs or varying the types of breadcrumbs. Salt zucchini slices for 10-15 minutes before breading for extra crispiness. Store leftovers in an airtight container for 3-4 days; reheat in the oven to retain crispiness.
