Ingredients
  

Pasta and Vegetables
  • 8 oz pasta (e.g., penne or spaghetti)
  • 2 cups fresh spinach
  • 1 cup mushrooms, sliced
Sauce and Seasoning
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Method
 

Cooking the Pasta
  1. In a large pot, bring salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve about 1 cup of the pasta cooking water, then drain the rest and set aside.
Sautéing the Mushrooms
  1. In a large skillet, heat the olive oil over medium heat. Add the sliced mushrooms and cook for about 5 minutes, or until they are golden and tender. Stir occasionally for even cooking.
Adding Garlic and Spinach
  1. Add the minced garlic to the skillet and sauté for about 1 minute, just until fragrant. Then add the fresh spinach and cook until it wilts, which should take about 2-3 minutes.
Combining Pasta and Cheese
  1. Reduce the heat to low, then add the cooked pasta to the skillet alongside the grated Parmesan cheese. Toss everything together, adding a splash of the reserved pasta water if needed to create a creamy sauce.
Seasoning and Serving
  1. Taste and season with salt and pepper as desired. Remove from heat and serve immediately, garnished with extra Parmesan if you like!

Notes

Feel free to substitute with other vegetables like bell peppers or zucchini. Ensure they are halal-certified. Store leftovers in an airtight container for up to 3 days or freeze for a month.
