Preparation
- Preheat your oven to 425°F (220°C).
- Rinse the baby potatoes under cold water and pat them dry. Cut each potato in half.
- In a large bowl, mix the halved potatoes with olive oil, minced garlic, salt, and pepper. Toss well to coat.
- Sprinkle the grated Parmesan cheese over the potatoes and toss gently until evenly coated.
Cooking
- Spread the potatoes on a baking sheet in a single layer. Roast for about 25-30 minutes or until golden brown and tender.
- For extra crispiness, turn the potatoes halfway through cooking.
Serving
- Remove from the oven and sprinkle with fresh parsley if desired before serving warm.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes or in an air fryer.
