  • 2 pounds baby potatoes (red or yellow) Choose baby potatoes for the best texture.

  • 1 cup grated Parmesan cheese Use freshly grated cheese for better melt.
  • 1 teaspoon salt
  • ½ teaspoon black pepper

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Rinse the baby potatoes under cold water and pat them dry. Cut each potato in half.
  3. In a large bowl, mix the halved potatoes with olive oil, minced garlic, salt, and pepper. Toss well to coat.
  4. Sprinkle the grated Parmesan cheese over the potatoes and toss gently until evenly coated.
Cooking
  1. Spread the potatoes on a baking sheet in a single layer. Roast for about 25-30 minutes or until golden brown and tender.
  2. For extra crispiness, turn the potatoes halfway through cooking.
Serving
  1. Remove from the oven and sprinkle with fresh parsley if desired before serving warm.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes or in an air fryer.
