Preparation
- Preheat your oven to 400°F (200°C).
- Slice the tomatoes in half horizontally and scoop out some of the seeds to prevent excess moisture.
- In a bowl, combine the breadcrumbs, minced garlic, grated Parmesan cheese, olive oil, salt, and pepper until it resembles wet sand.
- Place the tomato halves on a baking sheet lined with parchment paper and generously fill each half with the breadcrumb and cheese mixture.
Baking
- Place in the preheated oven and bake for about 20 minutes, or until the topping is golden brown and the tomatoes are tender.
- Let it cool for a couple of minutes before serving.
Notes
Substitutions: You can replace Parmesan with hard cheeses like pecorino or vegan alternatives. Store leftovers in an airtight container for up to three days or freeze for a month. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
