  • 4 medium-sized ripe tomatoes
  • 1 cup grated Parmesan cheese
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • ½ cup breadcrumbs (preferably whole-wheat)

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Slice the tomatoes in half horizontally and scoop out some of the seeds to prevent excess moisture.
  3. In a bowl, combine the breadcrumbs, minced garlic, grated Parmesan cheese, olive oil, salt, and pepper until it resembles wet sand.
  4. Place the tomato halves on a baking sheet lined with parchment paper and generously fill each half with the breadcrumb and cheese mixture.
Baking
  1. Place in the preheated oven and bake for about 20 minutes, or until the topping is golden brown and the tomatoes are tender.
  2. Let it cool for a couple of minutes before serving.

Notes

Substitutions: You can replace Parmesan with hard cheeses like pecorino or vegan alternatives. Store leftovers in an airtight container for up to three days or freeze for a month. Reheat in the oven at 350°F (175°C) for 10-15 minutes.
