Main Ingredients
  • 4 pieces boneless, skinless chicken breasts Ensure chicken breasts are of similar thickness for even cooking.
  • 1 cup grated Parmesan cheese
  • 1 cup breadcbs (Panko works great) Feel free to experiment with different types of breadcrumbs.
  • 1 teaspoon garlic powder
  • to taste Salt and pepper
  • 2 large eggs Beaten for coating.
  • 2 tablespoons Dijon mustard Optional but highly recommended.

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Pat the chicken breasts dry with a paper towel.
  3. In two separate bowls, beat the eggs and mix the breadcrumbs with garlic powder, salt, pepper, and Parmesan cheese.
Coating
  1. Dip each chicken breast into the eggs first, followed by the breadcrumb mixture. Press firmly for a solid coating.
Baking
  1. Line a baking sheet with parchment paper or grease it lightly with oil. Place the chicken breasts on the sheet and drizzle olive oil over each piece.
  2. Bake in the preheated oven for 25-30 minutes, or until golden brown and cooked through (internal temperature should reach 165°F or 75°C).
  3. Serve immediately while hot and crispy.

Notes

Store leftovers in an airtight container in the refrigerator for 3-4 days, or freeze for 2-3 months. Reheat in the oven at 350°F (175°C) for best texture.
