  • 200 g oyster mushrooms, sliced
  • 200 g noodles (e.g., rice noodles or egg noodles)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 bell pepper, sliced
  • 1 carrot, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, minced
  • Green onions, for garnish

Preparation
  1. Begin by cooking your noodles according to the package instructions. If using rice noodles, soak them in hot water until they soften. Drain and set aside.
Cooking
  1. In a large frying pan or wok, heat the sesame oil over medium heat. Add minced garlic and ginger, and sauté for about 30 seconds, or until fragrant.
  2. Toss in the sliced bell pepper and julienned carrot. Stir-fry for about 2-3 minutes, allowing them to soften slightly.
  3. Add the sliced oyster mushrooms! Stir-fry for another 3-4 minutes until they become tender and golden.
  4. Add the cooked noodles to the pan along with the soy sauce. Quickly combine all the ingredients together, stirring for another 2-3 minutes until everything is heated through and well-coated in the sauce.
Serving
  1. Remove from heat, garnish with chopped green onions, and serve immediately. Enjoy!

Notes

If oyster mushrooms are hard to find, other mushrooms like shiitake or button mushrooms can work as substitutes. Prepare ingredients ahead to streamline the cooking process. Do not overcrowd the pan; cook in batches if necessary.
