Preparation
- Slice the brioche or challah into thick pieces, about 1-inch thick. Arrange the slices in a greased 9x13-inch baking dish.
- In a large mixing bowl, whisk together the eggs, heavy cream, milk, granulated sugar, vanilla extract, cinnamon, and salt until well combined.
- Pour the custard mixture evenly over the arranged bread slices. Use a spatula to gently press down the bread slices to ensure they are well soaked in the custard. Cover the dish with plastic wrap and refrigerate overnight.
Baking
- The next morning, preheat your oven to 350°F (175°C).
- Once preheated, remove the cover from the baking dish and bake for about 30-35 minutes or until the top is golden and set.
- After baking, sprinkle a thin, even layer of sugar on top of the French toast. Using a kitchen torch, caramelize the sugar until it forms a crispy layer. If you don’t have a torch, you can place the baking dish under the broiler for a couple of minutes to achieve the same effect.
