Main Ingredients
  • 4 medium-sized potatoes, peeled and diced into evenly-sized pieces
  • 1 large onion, sliced thinly
  • 3 tablespoons olive oil Essential for crispy texture
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and black pepper, to taste
  • Fresh parsley or chives, for garnish (optional)

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Peel and dice the potatoes into bite-sized pieces. Slice the onion thinly.
  3. In a large bowl, combine the diced potatoes, sliced onions, olive oil, garlic powder, onion powder, salt, and black pepper. Mix well.
  4. Line a baking sheet with parchment paper for easier cleanup. Spread the potato and onion mixture in a single layer.
Cooking
  1. Place the baking sheet in the preheated oven and bake for about 30-35 minutes. Stir halfway through.
  2. Check for doneness after 30-35 minutes; the potatoes should be fork-tender and golden brown.
  3. If needed, let them bake for an additional 5-10 minutes.
Serving
  1. Remove from the oven and sprinkle with fresh herbs if desired. Serve hot.

Notes

Try adding a dash of paprika or chili powder for a little heat. Store leftovers in the refrigerator for up to 3-4 days.
