Preparation
- Preheat your oven to 425°F (220°C).
- Peel and dice the potatoes into bite-sized pieces. Slice the onion thinly.
- In a large bowl, combine the diced potatoes, sliced onions, olive oil, garlic powder, onion powder, salt, and black pepper. Mix well.
- Line a baking sheet with parchment paper for easier cleanup. Spread the potato and onion mixture in a single layer.
Cooking
- Place the baking sheet in the preheated oven and bake for about 30-35 minutes. Stir halfway through.
- Check for doneness after 30-35 minutes; the potatoes should be fork-tender and golden brown.
- If needed, let them bake for an additional 5-10 minutes.
Serving
- Remove from the oven and sprinkle with fresh herbs if desired. Serve hot.
Notes
Try adding a dash of paprika or chili powder for a little heat. Store leftovers in the refrigerator for up to 3-4 days.
