Ingredients

For the Cake
  • 2 cups all-purpose flour
  • 1.5 cups granulated sugar
  • 0.5 cups unsalted butter, softened
  • 1 cup whole milk
  • 3 large eggs
  • 1 tablespoon baking powder
  • 1 teaspoon vanilla extract
  • 1 piece zest of 1 orange
  • 0.5 cups fresh orange juice
  • 1 pinch salt
For the Frosting
  • 1 cup unsalted butter, softened
  • 4 cups powdered sugar
  • 0.5 cups fresh orange juice
  • 1 teaspoon vanilla extract
  • 1 piece zest of 1 orange

Method

Preparation
  1. Preheat the oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and lightly flouring them.
  2. In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Baking the Cake
  1. In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
  2. Add one egg at a time, mixing well after each addition. Stir in the vanilla extract and orange zest.
  3. Gradually add the dry mixture to the wet ingredients, alternating with the milk. Be and end with the flour mixture. Then stir in the fresh orange juice until just combined.
  4. Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  5. Let them cool in the pans for about 10 minutes before transferring to wire racks to cool completely.
Frosting and Assembly
  1. In a large bowl, beat the softened butter until creamy. Gradually mix in the powdered sugar, orange juice, and zest, and beat until the frosting is fluffy.
  2. Once the cake layers are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
Serving
  1. Slice the cake and serve chilled for the best flavor, and enjoy the memories it brings!

Notes

Use fresh ingredients for the best flavor; avoid overmixing to keep the cake light. Test for doneness with a toothpick before the timer goes off to avoid overbaking.
