Preparation
- Preheat the oven to 350°F (175°C). Prepare two 9-inch round cake pans by greasing and lightly flouring them.
- In a medium bowl, whisk together the flour, baking powder, and salt. Set aside.
Baking the Cake
- In a large mixing bowl, beat the softened butter and granulated sugar together until light and fluffy, about 3-4 minutes.
- Add one egg at a time, mixing well after each addition. Stir in the vanilla extract and orange zest.
- Gradually add the dry mixture to the wet ingredients, alternating with the milk. Be and end with the flour mixture. Then stir in the fresh orange juice until just combined.
- Divide the batter evenly between the prepared pans. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let them cool in the pans for about 10 minutes before transferring to wire racks to cool completely.
Frosting and Assembly
- In a large bowl, beat the softened butter until creamy. Gradually mix in the powdered sugar, orange juice, and zest, and beat until the frosting is fluffy.
- Once the cake layers are completely cool, frost the top of one layer, place the second layer on top, and frost the top and sides of the cake.
