  • 2 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 tablespoon baking powder
  • 1/4 teaspoon salt
Wet Ingredients
  • 1/2 cup unsalted butter, cold and cubed
  • 1/2 cup heavy cream
  • 1 teaspoon vanilla extract
  • Zest of 1 orange
  • 1/4 cup fresh orange juice

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, sugar, baking powder, and salt until well combined.
  3. Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your fingers, work the butter into the flour until it resembles coarse crumbs.
  4. Stir in the heavy cream, orange zest, fresh orange juice, and vanilla extract. Mix gently until the dough comes together, being careful not to over-mix.
  5. Turn the dough out onto a floured surface and gently knead it a few times, just until it holds together. Pat the dough into a circle about 1 inch thick. Cut into wedges or use a round cutter.
Baking
  1. Place the scones on the prepared baking sheet and bake for 15-20 minutes, or until golden brown on top.
  2. Let the scones cool slightly before serving warm.

Notes

Chill your ingredients for best results. Experiment with flavors by using lemon or other citrus instead of orange. Store in an airtight container at room temperature for up to 2 days or freeze for up to 3 months.
