Ingredients
  

For the Crostini
  • 1 loaf Baguette or other bread, sliced
  • 1 cup Onion, finely chopped (about 1 large onion)
  • 1 cup Figs, chopped (fresh or dried) Dried figs work really well
  • 1 tablespoon Olive oil
  • Salt and pepper to taste
  • ½ cup Cream cheese or goat cheese (optional)
  • a few sprigs Fresh herbs for garnish (such as thyme or rosemary)

Preparation
  1. Preheat your oven to 400°F (200°C). Arrange the sliced bread on a baking sheet.
  2. Drizzle the slices with olive oil, making sure to coat them evenly. Bake for about 10-12 minutes until the bread is lightly golden and crispy.
Cooking
  1. While the bread is toasting, heat a skillet over medium heat. Add olive oil, and once hot, add the finely chopped onions. Sauté for about 10-15 minutes or until they are caramelized and golden brown. Season with salt and pepper to taste.
  2. If using dried figs, chop them finely and place them in the skillet with the caramelized onions. Cook for an additional 2-3 minutes, allowing the figs to warm and meld with the onions.
Assembly
  1. Spread cream cheese or goat cheese (if using) on top of each toasted bread slice. Spoon the onion and fig mixture generously over each piece.
  2. Top your crostini with fresh herbs for garnish. Serve immediately and watch them disappear!

Notes

For substitutions, you can swap figs for other sweet fruits like apricots or dates. Keep an eye on the onions while they sauté; you want them caramelized but not burned. Avoid overcrowding the pan when caramelizing onions to ensure even cooking.
