One Pot Taco Spaghetti

  • 1 pound ground beef or ground turkey for a lighter option
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning store-bought or homemade
  • 14.5 oz can diced tomatoes
  • 3 cups beef broth or chicken broth
  • 8 ounces spaghetti
  • 1 cup shredded cheddar cheese
Optional Toppings
  • to taste sour cream
  • to taste chopped green onions
  • to taste fresh cilantro

Method
 

Cooking
  1. In a large pot over medium heat, add the ground beef and cook until browned, about 5-7 minutes. Drain any excess fat.
  2. Stir in the chopped onion and garlic, cooking until the onion is translucent, about 2-3 minutes.
  3. Sprinkle in the taco seasoning, mixing well to coat the beef and veggies.
  4. Pour in the can of diced tomatoes (with juice) and stir to combine.
  5. Pour in the beef broth and bring to a boil. Add the spaghetti, pushing it down into the liquid. Let the mixture boil for 8-10 minutes, or until the spaghetti is cooked to your liking.
  6. Once the spaghetti is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
  7. Dish out your One Pot Taco Spaghetti and add your favorite toppings. Enjoy!

Notes

This dish is easy to customize with toppings. You can also store leftovers in an airtight container in the fridge for 3-4 days or freeze for up to three months.
