  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Cooking
  1. In a large pot, add the olive oil over medium heat. When it’s hot, add the mixed vegetables and sauté for about 3-4 minutes until slightly softened.
  2. Toss in your shredded chicken, stirring well to combine, letting it warm through for another 2-3 minutes.
  3. Sprinkle the garlic powder, onion powder, salt, and pepper. Stir to evenly coat the chicken and veggies with the aromatic spices.
  4. Pour in the can of cream of chicken soup and chicken broth. Mix until well combined. Let it simmer for 2-3 minutes.
  5. Gently stir in the gnocchi, ensuring they are submerged in the liquid. Allow everything to simmer for an additional 5-7 minutes, or until the gnocchi puff up and become tender.
  6. Taste and adjust the seasoning if needed. Ladle your delicious One Pot Gnocchi Chicken Pot Pie into bowls and enjoy this delightful dish!

Notes

For a healthier option, consider using whole wheat gnocchi or adding more fresh veggies. Avoid overcooking the gnocchi; they should be tender but not mushy. Monitor the heat to prevent burning.
