Preparation
- Start by dicing the chicken breast, chopping the onion, and slicing the carrots and celery. Set them aside for easy access.
- In a large pot, heat a splash of olive oil over medium heat. Add chopped onions, carrots, and celery, cooking until they soften and the onions become translucent (about 5 minutes).
Cooking
- Add the diced chicken to the pot, seasoning it lightly with salt and pepper. Cook until the chicken is no longer pink, roughly 5-7 minutes.
- Pour in the chicken broth and bring to a boil. Once boiling, stir in the frozen peas and dried thyme.
- While the soup is simmering, prepare your biscuit dough according to the package instructions. You can either drop teaspoonfuls directly into the soup or roll them into small balls to make perfectly shaped dumplings.
- Gently lower the dumplings into the simmering soup. Cover the pot and let them steam for 15-20 minutes, or until they’re fluffy and cooked through.
- Taste and adjust the seasoning, adding salt and pepper as needed. Ladle the soup into bowls and enjoy your heartwarming creation!
Notes
Substitutions include using turkey or tofu for a vegetarian twist. Keep an eye on the dumplings to avoid overcooking. Store in airtight containers for up to 3 days, or freeze individual portions for up to 3 months. Reheat on stovetop with a splash of chicken broth if thickened.
