  • 2 cups broccoli florets Fresh broccoli is recommended.
  • 1 cup uncooked rice
  • 3 cups chicken broth Can substitute with vegetable broth for a vegetarian option.
  • 1 cup cheddar cheese, shredded Add more cheese on top if desired.
  • 1 onion, diced
  • 2 cloves garlic, minced
  • Salt and pepper to taste

Preparation
  1. Start by shredding your cooked chicken, dicing the onion, and mincing the garlic.
Cooking
  1. In a large pot over medium heat, add a drizzle of oil. Sauté the diced onion until translucent, about 3-4 minutes.
  2. Stir in the minced garlic and cook for an additional minute until fragrant.
  3. Add the uncooked rice to the pot, stirring well. Pour in the chicken broth, and stir in the shredded chicken and broccoli florets. Season with salt and pepper.
  4. Bring to a gentle boil, then cover and reduce heat to low. Let it simmer for about 20 minutes or until rice is fully cooked and liquid is absorbed.
  5. Remove from heat and stir in shredded cheddar cheese until melted. Optionally sprinkle more cheese on top and cover the pot to melt.
  6. Serve warm and enjoy!

Notes

You can substitute the broccoli for bell peppers or peas based on preference. When storing, keep in an airtight container and consume within 3-4 days. Ideal for reheating with a splash of chicken broth.
