Preparation
- Start by shredding your cooked chicken, dicing the onion, and mincing the garlic.
Cooking
- In a large pot over medium heat, add a drizzle of oil. Sauté the diced onion until translucent, about 3-4 minutes.
- Stir in the minced garlic and cook for an additional minute until fragrant.
- Add the uncooked rice to the pot, stirring well. Pour in the chicken broth, and stir in the shredded chicken and broccoli florets. Season with salt and pepper.
- Bring to a gentle boil, then cover and reduce heat to low. Let it simmer for about 20 minutes or until rice is fully cooked and liquid is absorbed.
- Remove from heat and stir in shredded cheddar cheese until melted. Optionally sprinkle more cheese on top and cover the pot to melt.
- Serve warm and enjoy!
Notes
You can substitute the broccoli for bell peppers or peas based on preference. When storing, keep in an airtight container and consume within 3-4 days. Ideal for reheating with a splash of chicken broth.
