Preparation
- In a large pot, melt the butter over medium heat.
- Add the sliced onions and sauté until caramelized, approximately 15 minutes, stirring occasionally to prevent burning.
Cooking
- Once caramelized, pour in the beef or vegetable broth and bring to a boil.
- Add the pasta and thyme, then reduce heat to a simmer. Cover and cook according to pasta package instructions, usually about 10-12 minutes, until al dente.
- Remove the pot from heat and stir in the shredded cheese until it is melted and creamy. Adjust seasoning with salt and pepper to your taste.
Serving
- Dish out the pasta into bowls and top with additional cheese and croutons if desired. Enjoy!
Notes
For best results, be patient while caramelizing onions to achieve a deep golden brown. Stir occasionally while cooking pasta to prevent sticking. Store leftovers in an airtight container for up to 3-4 days. Can be frozen for up to 2 months.
