  • 4 cups beef or vegetable broth Use vegetable broth for a vegetarian version.
  • 2 large onions, thinly sliced Caramelize for better flavor.
  • 2 tablespoons butter
  • 1 teaspoon thyme Fresh or dried thyme can be used.
  • 2 cups shredded cheese (Gruyère or Swiss) Mix in cheddar for extra sharpness if desired.
  • to taste Salt and pepper Adjust according to preference.

Preparation
  1. In a large pot, melt the butter over medium heat.
  2. Add the sliced onions and sauté until caramelized, approximately 15 minutes, stirring occasionally to prevent burning.
Cooking
  1. Once caramelized, pour in the beef or vegetable broth and bring to a boil.
  2. Add the pasta and thyme, then reduce heat to a simmer. Cover and cook according to pasta package instructions, usually about 10-12 minutes, until al dente.
  3. Remove the pot from heat and stir in the shredded cheese until it is melted and creamy. Adjust seasoning with salt and pepper to your taste.
Serving
  1. Dish out the pasta into bowls and top with additional cheese and croutons if desired. Enjoy!

Notes

For best results, be patient while caramelizing onions to achieve a deep golden brown. Stir occasionally while cooking pasta to prevent sticking. Store leftovers in an airtight container for up to 3-4 days. Can be frozen for up to 2 months.
