  • 1 lb chicken thighs, boneless and skinless
  • 1 cup long-grain rice
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • 2 cloves garlic, minced
  • 1 can diced tomatoes (14.5 oz)
  • 2 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 green onions, sliced (for garnish)

Method
 

Cooking Steps
  1. In a large pot over medium heat, sear the boneless, skinless chicken thighs for about 5-7 minutes until they’re golden brown.
  2. Add the chopped onion and bell pepper to the pot. Sauté for about 3-4 minutes until the onion becomes transparent. Add the minced garlic and cook for an additional minute until fragrant.
  3. Stir in the rice, diced tomatoes (with their juices), chicken broth, Cajun seasoning, salt, and black pepper. Mix well until everything is combined.
  4. Bring the mixture to a boil, then reduce the heat to low. Cover the pot and let it simmer for about 20 minutes, or until the rice is fully cooked and has absorbed most of the liquid.
  5. Once done, fluff the rice with a fork and return the chicken to the pot. Garnish with sliced green onions.
  6. Dish out generous servings and enjoy!

Notes

Leftovers can be stored in an airtight container in the refrigerator for up to 3 days. If freezing, use within a month. Reheat with a splash of chicken broth to maintain moisture.
