  • 1 pound ground beef
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 packet taco seasoning Check for Halal compliance
  • 1 can diced tomatoes with green chilies
  • 2 cups beef broth
  • 2 cups pasta (like penne or rotini)
  • 1 cup shredded cheddar cheese
  • to taste chopped cilantro for garnish

Cooking Steps
  1. In a large pot over medium heat, add the ground beef. Cook until browned, breaking it apart with a spoon, which should take about 5-7 minutes.
  2. Stir in the chopped onion and minced garlic. Sauté for another 3-4 minutes, or until the onion is soft and translucent.
  3. Sprinkle the taco seasoning over the beef mixture. Stir well to ensure the beef is evenly coated with the seasoning.
  4. Add the diced tomatoes (including the liquid) and beef broth to the pot. Stir to combine.
  5. Bring the mixture to a gentle boil. Once it starts boiling, add the pasta, stir, cover the pot, and reduce the heat to a simmer. Cook according to the pasta instructions, usually about 10-12 minutes until the pasta is al dente.
  6. Once the pasta is cooked, remove the pot from heat and stir in the shredded cheddar cheese until melted and creamy.
  7. Scoop out portions of the pasta and garnish with freshly chopped cilantro. Serve warm, and enjoy!

Notes

You can swap out ground beef for ground turkey or plant-based alternatives for a lighter or vegetarian version. For extra veggies, consider adding bell peppers or corn. When reheating, add a splash of beef broth or water to restore creaminess.
