  • 1 pound beef sausage, sliced
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 1 red bell pepper sliced
  • 1 yellow bell pepper sliced
  • 1 medium zucchini, sliced
  • 1 medium onion, chopped
  • 2 tablespoons olive oil For drizzling the baking sheet

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Drizzle a large baking sheet with olive oil.
  3. In a small bowl, whisk together honey, minced garlic, salt, and pepper. Set aside.
  4. In a large bowl, toss together the sliced beef sausage, red and yellow bell peppers, zucchini, and onion.
  5. Pour the honey garlic mixture over the ingredients and toss until everything is well coated.
  6. Transfer the mixture to your prepared baking sheet, spreading it out evenly.
Cooking
  1. Place the baking sheet in the oven and roast for about 20 minutes, stirring halfway through, until the sausages are browned and the veggies are tender.
  2. Serve hot and enjoy!

Notes

For substitutions, use chicken or turkey sausage if beef sausage is unavailable (ensure it's halal-certified). Avoid overcrowding the pan to achieve a perfect roast. Experiment with different vegetables for added flavor.
