Preparation
- Preheat your oven to 425°F (220°C).
- Drizzle a large baking sheet with olive oil.
- In a small bowl, whisk together honey, minced garlic, salt, and pepper. Set aside.
- In a large bowl, toss together the sliced beef sausage, red and yellow bell peppers, zucchini, and onion.
- Pour the honey garlic mixture over the ingredients and toss until everything is well coated.
- Transfer the mixture to your prepared baking sheet, spreading it out evenly.
Cooking
- Place the baking sheet in the oven and roast for about 20 minutes, stirring halfway through, until the sausages are browned and the veggies are tender.
- Serve hot and enjoy!
Notes
For substitutions, use chicken or turkey sausage if beef sausage is unavailable (ensure it's halal-certified). Avoid overcrowding the pan to achieve a perfect roast. Experiment with different vegetables for added flavor.
