  • 1 can (14 oz) diced tomatoes, preferably with herbs
  • 1 cup heavy cream
  • 1 cup vegetable broth
Aromatics
  • 1 each onion, chopped
  • 2 cloves garlic, minced
Seasoning
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
Garnish
  • Fresh basil for garnish
  • Grated Parmesan cheese for serving (optional)

Preparation
  1. In a large skillet over medium heat, add a splash of oil. Once hot, add the chopped onion and sauté for about 3-4 minutes until translucent.
  2. Add the minced garlic and cook for an additional minute until fragrant.
  3. Pour in the can of diced tomatoes (including the juice!) along with the vegetable broth, stirring to combine.
  4. Stir in the heavy cream and Italian seasoning, then let the mixture come to a gentle simmer.
  5. Add your pasta to the skillet, ensuring it is submerged in the sauce. Cook uncovered for about 12-15 minutes, checking for doneness around the 10-minute mark.
  6. Once the pasta is cooked, season with salt and pepper to your liking before removing from heat.
Serving
  1. Serve hot, topped with fresh basil and grated Parmesan cheese if desired.

Notes

Feel free to swap out heavy cream for a plant-based alternative. Store leftovers in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. Reheat gently with a splash of broth or water.
