  1. Start by gathering all your ingredients. This makes the cooking process much smoother.
Cooking
  1. Heat the olive oil over medium heat in a large pan. Season the chicken breasts with salt and pepper, then add them to the pan. Sear each side for 5-7 minutes until golden brown.
  2. Once the chicken is seared, remove it and set it aside on a plate. In the same pan, add the minced garlic and sauté until fragrant, about 1 minute.
  3. Add the chicken broth, scraping the bottom of the pan to deglaze, followed by the heavy cream. Mix well.
  4. Lower the heat and add the chicken back to the pan along with the spinach. Allow this to simmer for about 10-15 minutes until the chicken is cooked through and the sauce thickens.
  5. Finally, remove from heat, give it a sprinkle of Parmesan cheese, and enjoy the creamy goodness!

Notes

Store any remaining chicken in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 2 months. To reheat, place it back in a saucepan over low heat, adding a splash of broth to revive the creamy sauce.
