- Start by gathering all your ingredients. This makes the cooking process much smoother.
Cooking
- Heat the olive oil over medium heat in a large pan. Season the chicken breasts with salt and pepper, then add them to the pan. Sear each side for 5-7 minutes until golden brown.
- Once the chicken is seared, remove it and set it aside on a plate. In the same pan, add the minced garlic and sauté until fragrant, about 1 minute.
- Add the chicken broth, scraping the bottom of the pan to deglaze, followed by the heavy cream. Mix well.
- Lower the heat and add the chicken back to the pan along with the spinach. Allow this to simmer for about 10-15 minutes until the chicken is cooked through and the sauce thickens.
- Finally, remove from heat, give it a sprinkle of Parmesan cheese, and enjoy the creamy goodness!
Notes
Store any remaining chicken in an airtight container in the refrigerator for up to 3 days. For longer storage, freeze for up to 2 months. To reheat, place it back in a saucepan over low heat, adding a splash of broth to revive the creamy sauce.
