  • 1 tablespoon ginger, grated
  • 1 tablespoon olive oil

Preparation
  1. Gather all your ingredients to ensure everything is ready before you start.
Marinating the Chicken
  1. In a bowl, mix the coconut milk, lime juice, lime zest, minced garlic, grated ginger, and a pinch of salt and pepper.
  2. Add the chicken breasts to the marinade, ensuring they are well coated, and allow to marinate for 10-15 minutes.
Cooking
  1. Heat the olive oil in a large pan over medium heat.
  2. Add the marinated chicken breasts to the pan and sear for about 5-6 minutes on each side until golden brown.
  3. Pour the reserved marinade into the pan and bring it to a simmer.
  4. Let it cook for an additional 10-15 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (75°C).
Serving
  1. Remove the pan from heat, garnish with freshly chopped cilantro, and serve.

Notes

For substitutions, chicken thighs work well for added succulence. Ensure to cook the chicken on medium heat to achieve a crispy exterior. Be cautious not to overcrowd the pan.
