Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a blender, combine the olive oil, orange juice, zest, sugar, and eggs. Blend until smooth and well combined.
  3. In a large bowl, whisk together the flour, baking powder, and salt.
  4. Gradually add the blender mixture to the flour mixture, stirring until just combined. Be careful not to overmix.
  5. Pour the batter into a greased 9-inch round cake pan.
Baking
  1. Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Notes
