  • 1 lb Italian sausage (halal)
  • 1 large onion, diced
  • 4 cloves garlic, minced
  • 4 cups chicken broth Use low sodium if preferred
  • 2 cups water
  • 2 large potatoes, sliced Yukon gold or russet recommended
  • 1 bunch kale, chopped Can substitute with spinach if desired
  • 1 cup heavy cream
  • to taste salt and pepper
  • to taste red pepper flakes (optional) For added heat

Method
 

Preparation
  1. In a large pot over medium heat, add the halal Italian sausage. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
  2. Add the diced onion and minced garlic to the pot. Sauté for an additional 3-4 minutes until the onions are tender and the garlic is fragrant.
  3. Pour in the chicken broth and water. Stir well to incorporate with the sausage mixture.
  4. Toss in the sliced potatoes and bring the mixture to a gentle boil. Reduce the heat and let it simmer for about 15 minutes or until the potatoes are fork-tender.
  5. Stir in the chopped kale and heavy cream. Season with salt and pepper to taste. Allow the soup to simmer for another 5 minutes, making sure everything is heated through.
  6. If desired, sprinkle red pepper flakes on top for a bit of heat. Ladle the soup into bowls and serve warm!

Notes

For a creamier texture, blend a portion of the soup and then return it to the pot. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months. Reheat over medium heat.
