- In a large pot over medium heat, add the halal Italian sausage. Cook until browned, breaking it apart with a wooden spoon, about 5-7 minutes.
- Add the diced onion and minced garlic to the pot. Sauté for an additional 3-4 minutes until the onions are tender and the garlic is fragrant.
- Pour in the chicken broth and water. Stir well to incorporate with the sausage mixture.
- Toss in the sliced potatoes and bring the mixture to a gentle boil. Reduce the heat and let it simmer for about 15 minutes or until the potatoes are fork-tender.
- Stir in the chopped kale and heavy cream. Season with salt and pepper to taste. Allow the soup to simmer for another 5 minutes, making sure everything is heated through.
- If desired, sprinkle red pepper flakes on top for a bit of heat. Ladle the soup into bowls and serve warm!
Notes
For a creamier texture, blend a portion of the soup and then return it to the pot. Store leftovers in an airtight container for up to 4 days, or freeze for up to 3 months. Reheat over medium heat.
