  • 1/4 cup cornstarch To thicken the filling.
  • 1/4 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1/2 teaspoon cinnamon Optional for flavor.

For the Pie Crust
  • 1 pie crust store-bought or homemade Use a 9-inch pie crust.
  • 1 tablespoon milk For brushing on the crust.

Method

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a medium saucepan, combine 2 cups of raisins and 1 cup of water. Bring to a boil over medium heat, then reduce to simmer for about 5 minutes.
  3. In a bowl, mix 1 cup of sugar, 1/4 cup of cornstarch, 1/4 teaspoon of salt, and 1/2 teaspoon of cinnamon. Gradually stir this mix into the simmering raisins until thickened and bubbly (about 3-5 minutes).
  4. Remove from heat, and stir in 1 teaspoon of vanilla extract and 1 tablespoon of lemon juice. Let it cool slightly.
  5. Roll out the pie crust and place into a 9-inch pie dish. Pour the raisin filling into the crust, dot with small pieces of butter.
Baking
  1. Cover with a top crust or create a lattice. Seal edges and make slits in the top if using a full crust.
  2. Brush top crust lightly with milk and place in the preheated oven. Bake for 30-35 minutes until golden brown.
  3. Cool for at least 15 minutes before slicing.

Notes

Serve with vanilla or cinnamon ice cream for the ideal pairing. Store leftovers in the refrigerator for 3-4 days.
