Preparation
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix the pitted cherries, sugar, lemon juice, and vanilla extract. Let them sit for about 10 minutes to release some juices.
Making the Batter
- In another bowl, combine the flour, baking powder, salt, and sugar. Slowly whisk in the milk until you have a smooth batter.
Combining Filling and Topping
- Grease a baking dish with the melted butter. Pour half of the batter into the dish, then spoon the cherry mixture over the batter. Pour the remaining batter on top—it’s okay if it doesn’t cover all of the cherry filling.
Baking
- Bake the cobbler for about 30-40 minutes, or until the topping is golden brown, and a toothpick inserted comes out clean.
Serving
- Let your cobbler cool for about 10 minutes before serving. Consider serving it with a scoop of ice cream or a dollop of whipped cream.
Notes
Store cobbler in the refrigerator for up to 4 days. For long-term storage, freeze portions in a freezer-safe container. Reheat individual servings in the microwave or in the oven at 350°F (175°C) until warmed thoroughly.
