Method
 

Baking Steps
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, blend the softened butter and granulated sugar until light and fluffy, about 3-4 minutes.
  3. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the all-purpose flour, salt, and baking soda. Gradually add this dry mixture to the butter mixture, blending until a soft dough forms.
  5. Scoop portions of dough with a tablespoon and roll into balls. Place on a lined baking sheet, spacing about 2 inches apart.
  6. Bake for 12-15 minutes or until edges are lightly golden. Monitor to prevent over-baking.
  7. Cool on baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

Chill the dough for 30 minutes if too soft to shape. Store in an airtight container for up to a week, or freeze for up to three months. Reheat at 300°F (150°C) for about 5 minutes.
