Ingredients
  

Oat mixture
  • 1.5 cups rolled oats
  • 1 cup all-purpose flour
  • 0.5 cups brown sugar
  • 0.5 cups granulated sugar
  • 0.5 teaspoon baking soda
  • 0.5 teaspoon salt
  • 0.5 cups unsalted butter, melted Ensure it's melted for easy mixing.
  • 1 teaspoon vanilla extract
  • 1 teaspoon cinnamon
Plum filling
  • 2 cups chopped plums Use fresh or frozen plums.
  • 1 tablespoon lemon juice To enhance flavor and prevent browning.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease an 8x8-inch baking dish with butter or line it with parchment paper.
  3. In a large mixing bowl, combine the rolled oats, flour, brown sugar, granulated sugar, baking soda, salt, and cinnamon. Stir until well blended.
  4. Add melted butter and vanilla extract into the bowl. Mix until crumbly yet cohesive.
  5. In a separate bowl, toss chopped plums with lemon juice.
  6. Press half of the oat mixture into the bottom of the prepared baking dish.
  7. Spread the plums evenly over the crust, then sprinkle remaining oat mixture over the plums.
Baking
  1. Place the dish in the preheated oven and bake for 30-35 minutes, or until the top is golden brown.
  2. Allow the bars to cool in the pan before slicing into squares.

Notes

Store in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. For longer storage, freeze individual bars wrapped in plastic and store in a freezer-safe container for up to 3 months.
