Ingredients
  

Base Ingredients
  • 2 cups rolled oats Use certified gluten-free oats for a gluten-free option.
  • 1 cup all-purpose flour Can substitute with whole wheat or almond flour.
  • 1 cup brown sugar Light or dark brown sugar can be used.
  • 1/2 cup unsalted butter Must be softened, not melted.
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
Filling
  • 1 cup fruit jam Any flavor you prefer (strawberry, raspberry, apricot).

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Lightly grease a 9x13 inch baking dish with butter or non-stick spray.
  3. In a large mixing bowl, combine rolled oats, flour, brown sugar, baking soda, and salt. Stir until well mixed.
  4. Add softened butter to the dry ingredients and blend until it resembles a crumbly mixture.
  5. Press about two-thirds of the oat mixture into the bottom of your prepared baking dish.
  6. Spread your choice of fruit jam evenly over the pressed oat layer.
  7. Crumble the remaining oat mixture evenly over the top of the jam.
Baking
  1. Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
  2. Allow to cool completely in the dish before slicing into squares.

Notes

Store in an airtight container at room temperature for up to 5 days. Can freeze for up to 3 months. Thaw at room temperature or warm in the oven before serving.
