Preparation
- Preheat your oven to 350°F (175°C).
- Lightly grease a 9x13 inch baking dish with butter or non-stick spray.
- In a large mixing bowl, combine rolled oats, flour, brown sugar, baking soda, and salt. Stir until well mixed.
- Add softened butter to the dry ingredients and blend until it resembles a crumbly mixture.
- Press about two-thirds of the oat mixture into the bottom of your prepared baking dish.
- Spread your choice of fruit jam evenly over the pressed oat layer.
- Crumble the remaining oat mixture evenly over the top of the jam.
Baking
- Bake in the preheated oven for 25-30 minutes or until the top is golden brown.
- Allow to cool completely in the dish before slicing into squares.
Notes
Store in an airtight container at room temperature for up to 5 days. Can freeze for up to 3 months. Thaw at room temperature or warm in the oven before serving.
