Preparation
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Stir until well combined.
- Pour in the melted unsalted butter and mix until the mixture resembles wet sand.
- Line an 8x8-inch baking dish with parchment paper. Press half of the oatmeal mixture into the bottom of the dish to create the crust.
- Spread your favorite jam evenly over the oatmeal crust.
- Crumble the remaining oatmeal mixture over the jam layer.
Baking
- Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
- Allow the bars to cool in the dish for 15 minutes, then lift them out using the parchment paper.
- Let them cool completely on a wire rack, then slice into squares or bars.

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
