Ingredients
  

Base Ingredients
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar packed
  • 1/2 cup unsalted butter, melted
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
Jam Filling
  • 1 cup jam (your favorite flavor) e.g., raspberry, apricot, or strawberry

Method
 

Preparation
  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, combine the rolled oats, all-purpose flour, brown sugar, baking soda, and salt. Stir until well combined.
  3. Pour in the melted unsalted butter and mix until the mixture resembles wet sand.
  4. Line an 8x8-inch baking dish with parchment paper. Press half of the oatmeal mixture into the bottom of the dish to create the crust.
  5. Spread your favorite jam evenly over the oatmeal crust.
  6. Crumble the remaining oatmeal mixture over the jam layer.
Baking
  1. Bake in the preheated oven for 25-30 minutes, or until the top is golden brown.
  2. Allow the bars to cool in the dish for 15 minutes, then lift them out using the parchment paper.
  3. Let them cool completely on a wire rack, then slice into squares or bars.

Notes

Store in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months.
