Preparation
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a mixing bowl, combine rolled oats, all-purpose flour, baking soda, salt, and cinnamon. Stir well.
- In a separate bowl, cream together softened unsalted butter with brown sugar and granulated sugar until fluffy (about 2-3 minutes).
- Beat in the egg and vanilla extract until well combined.
- Gradually add the dry mixture to the wet mixture, stirring until just combined.
- Fold in chopped dried figs and dark chocolate chunks.
Baking
- Drop rounded balls of dough onto the prepared baking sheet, leaving space between each cookie.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Allow cookies to cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
Notes
For variation, try using dried apricots or cranberries instead of figs, or add nuts for extra texture. Store in an airtight container for 3-5 days or freeze for up to 3 months.
